Ingredients

  • Self Raising Flour - 3 cups
  • Salt - 1/2 tsp
  • Baking Powder - 1 tsp
  • Dairy-Free Margarine - 1/2 cup
  • Sugar - 4 tbsp
  • Almond Milk - 3/4 cup

Instructions

  1. Preheat oven to 220C.
  2. Place the flour, salt, baking powder and margarine into a bowl and rub between your fingers rapidly, until it forms a crumbly texture.
  3. Add the sugar & milk and stir with a spoon to form a sticky dough.
  4. Coat your work surface & dough ball with flour and use a rolling pin to roll out the dough to around 2 – 3cm thick. (Try not to kneed the dough as this will dry it out. They will be sticky but that will make them very tasty once baked.)
  5. Using a cutter (or an upturned glass), cut out the scones and place onto a baking tray that is lined with baking/parchment paper.
  6. Brush the tops of the scones with a dash of dairy-free milk.
  7. Bake for 20 minutes or until golden brown on top.
  8. Wait for them to cool before serving with jam & whipped coconut cream.
