Ingredients

  • THE PIZZA BASE
  • Third of a cup Spelt Flour
  • 1 tsp Baking Powder
  • Half tsp Salt
  • 2 tbsp Olive Oil
  • 6 tbsp Water
  • THE PIZZA TOPPING
  • Hummus
  • Tomato Puree
  • 5 Falafel balls
  • 3 Large Sliced Mushrooms
  • 1 Sliced Red Pepper
  • 1 Sliced Yellow Pepper
  • A Handful of Sliced Olives
  • A Handfull of Roughly Chopped Parsley
  • THE PIZZA DRESSING
  • 3 tbsp Hummus
  • 3 tbsp Olive Oil
  • 4 tbsp Hot Sauce (the strength is up to you)
  • 1 Lemon

Instructions

THE PIZZA BASE

  1. Preheat the oven to 200C
  2. Prepare the veg by making sure you have thinly sliced (the thinner the better) the peppers, mushrooms & olives
  3. Place the flour, baking powder, salt & olive oil into a bowl. Add a dash at a time of the water and mix. Keep mixing until you have used all 6 tablespoons stirring frequently.
  4. When mixture starts to combine, use your hands to softly kneed in the bowl.
  5. Cover the bowl and leave for 15 minutes.
  6. After 15 minutes kneed for about 60 seconds so the mixture feels slightly tougher. You may want to slightly flour the surface to stop the mixture sticking, but try not to kneed too much flour into the dough as this will dry it out.
  7. Using a rolling pin, roll out the dough to your desired pizza shape, but you also want the base to be rolled quite thin.
  8. Place on a baking tray & prick the base with a fork to prevent the dough from creating bubbles.
  9. Bake for 10 minutes.

THE PIZZA TOPPING

  1. Add a dollop of hummus in the middle of the pizza, a ring of tomato puree then another ring of hummus around the puree…and so on. (Save some hummus for the dressing).
  2. Add the chopped veg (apart from the parsley) and place the pizza back in the oven for 15-20 minutes.

 

THE PIZZA DRESSING

  1. Add the hummus and olive oil to a bowl and mix. Add the hot sauce & lemon juice and mix until all ingredients are combined.

THE PIZZA

  1. When ready, take the pizza out of the oven and drizzle the dressing on top of the pizza. Any remainder dressing, place in a bowl to dip the crust in.
  2. Garnish with the chopped parsley.
