Ingredients

  • Dark Chocolate - 1/2 cup
  • 4 Avocados (peeled)
  • Coconut Cream (Plus extra for the top) - 2 tbsp
  • Cocoa - 1/3 cup
  • Maple Syrup - 1/4 cup
  • Instant Coffee - 1 1/2 tbsp
  • Salt - 1/4 tsp

Instructions

  1. Place the can of coconut milk in the fridge overnight so the liquid separates from the cream.
  2. Melt the chocolate: by breaking it up into pieces and placing it in a bowl over water in a pan that has just boiled (a jamboree). Stir the chocolate continuously and the chocolate will melt. Then place the jamoboree & melted chocolate to one side.
  3. Add two tablespoons of hot water to the instant coffee and stir, then place to one side.
  4. In a food processor add the avocados and blend for a few seconds.
  5. Add the cocoa, maple syrup, coffee, coconut cream, melted chocolate, salt and process until all combined and the mixture is smooth.
  6. Spoon the mixture into your serving dish/glass and refrigerate for at least half an hour. This amount serves approximately 4 medium sized portions.
  7. Add a dollop of coconut cream on top and sprinkle with cocoa powder. Red berries also make a nice garnish and work perfect with the flavours in the mousse.
