Ingredients

  • 1 Tin of drained chickpeas
  • Vegan mayonnaise - 3 tbsp
  • 2 Finely chopped spring onions
  • Fresh lemon juice - 1 tbsp
  • Soy/tamari sauce - 1 tsp
  • Sweetcorn - 1 tbsp
  • Salt & pepper to taste

Instructions

  1. Blend drained chickpeas until shredded, but not too fine as we are after flakes, not breadcrumbs.
  2. Add the rest of the *ingredients to the chickpeas and blend for a short amount of time.
  3. Serve in a sandwich, pasta or jacket potato
  4. *Extra ingredients can be added to this to give it a more authentic taste including a dash of vegan worcestershire sauce; a splash of apple cider vinegar; nori/seaweed flakes; nutritional yeast; or mustard powder.
