Ingredients

  • Cashews - 1 cup
  • Petit Pois - 2 cups
  • Basil (add another half cup if you love basil) - 1 1/2 cups
  • Nutritional Yeast - 1 tbsp
  • Olive Oil - 1/2 cup
  • 1 Large Lemon (Juice)
  • 1 Garlic Clove
  • Salt & Pepper to taste

Instructions

  1. Toast the cashews in a dry pan until golden brown. This is a simple technique you can do with all nuts and seeds to bring out their flavour.
  2. Add to a food processor with all the other ingredients and process until a bright green paste is formed.
  3. Spoon into a jar and refrigerate until ready to use.
  4. Serve with pasta, with potatoes or in a sandwich.
