Ingredients

  • Chickpeas - 1 Can
  • Medium Onion - 1
  • Plain Flour - 2 tbsp
  • Garlic - 2 Cloves
  • Parsley (fresh) - 1 cup
  • Coriander (ground) - 1 tsp
  • Cumin - 1 1/5 tsp
  • Salt - 1/2 tsp
  • Pepper - 1/2 tsp
  • Oil for frying - 1 tbsp

Instructions

  1. Wash Chickpeas & drain.
  2. Chop up onion.
  3. Add all the ingredients (apart from the oil for frying) into a food processor and blend until you have a paste consistency.
  4. Add extra flour if the mixture is too wet but don’t over do it as you don’t want the mixture to dry out. Falafels are nicest when the mix is wet so keep it as wet as possible.
  5. Prepare the mixture into falafel balls. It should make about seven large balls. Use the tips of your fingers to press down making a slight patty shape.
  6. Heat the oil in a pan.
  7. When the oil is hot, start frying the falafels and turning them over when golden brown.
  8. Once they have an all over golden colour, take them off the heat and place onto kitchen towel to soak up the excess oil.
  9. Serve in a sandwich or a wrap with some tasty homemade hummus and salad.
