Ingredients

  • Full Fat Coconut Milk or Cream - 1 Can
  • Icing Sugar - 1/2 cup

Instructions

  1. Place the can of coconut milk in the refrigerator overnight, this allows the cream to separate from the coconut water.
  2. Once ready, scoop the cream part of the can into a bowl and whisk for 30 seconds.
  3. Add the icing sugar and whisk for a further 2 – 3 minutes until the cream forms a soft peak.
  4. Enjoy with scones and jam.
