Nutty Mustard Salad

This nutty mustard salad is quite simply, beautiful! Combining earthy flavours of beetroot and cabbage with the sweetness of walnuts, garlic and mustard. Ingredients

  • Salad
  • Small Red Cabbage - ½ Small Cabbage
  • Red Onion - ½
  • Spring Onions - x3
  • Beetroot (Cooked) - x2
  • Green Pepper - x1
  • Walnuts - 100g
  • Dressing
  • Minced Garlic - 1 Tsp
  • Maple Syrup - 1 Tsp
  • Wholegrain Mustard - 2 Tsp
  • Red Wine Vinegar - 1 Tbsp
  • Olive Oil - ½ Cup
  • Salt & Pepper

Instructions

  1. Chop up all the vegetables, roughly chop the walnuts and place into a bowl.
  2. In a separate bowl mix together all the dressing ingredients, then add it to the vegetables and mix.
  3. Serve as a side dish.
