This mousse really is the most simply decadent & charming vegan dessert you can wish to make. With just a few ingredients you will have your dinner guests leaving with a big chocolatey smile on their faces.
1/2 cupDark Chocolate
4 Avocados (peeled)
2 tbspCoconut Cream (Plus extra for the top)
1/4 cupMaple Syrup
1 1/2 tbspInstant Coffee
1Place the can of coconut milk in the fridge overnight so the liquid separates from the cream.
2Melt the chocolate: by breaking it up into pieces and placing it in a bowl over water in a pan that has just boiled (a jamboree). Stir the chocolate continuously and the chocolate will melt. Then place the jamoboree & melted chocolate to one side.
3Add two tablespoons of hot water to the instant coffee and stir, then place to one side.
4In a food processor add the avocados and blend for a few seconds.
5Add the cocoa, maple syrup, coffee, coconut cream, melted chocolate, salt and process until all combined and the mixture is smooth.
6Spoon the mixture into your serving dish/glass and refrigerate for at least half an hour. This amount serves approximately 4 medium sized portions.
7Add a dollop of coconut cream on top and sprinkle with cocoa cowder. Red berries also make a nice garnish and work perfect with the flavours in the mousse.
