Chickpea Choona Mayonnaise (Vegan Tuna Mayo)

This is the perfect replica of one of Britain's favourite sandwiches: tuna mayo. Blended chickpeas with the right acommpaniments bizarrely have the texture & taste of tuna and it's incredibly easy and cheap to make.


1 Tin of drained chickpeas

3 tbsp Vegan mayonnaise

2 Finely chopped spring onions

1 tbsp Fresh lemon juice

1 tsp Soy/tamari sauce

1 tbsp Sweetcorn

Salt & pepper to taste


1Blend drained chickpeas until shredded, but not too fine as we are after flakes not breadcrumbs.

2Add the rest of the *ingredients to the chickpeas and blend for a short amount of time.

3Serve in a sandwich, pasta or jacket potato

4*Extra ingredients can be added to this to give it a more authentic taste including: a dash of vegan worcestershire sauce; a splash of apple cider vinegar; nori/seaweed flakes; nutritional yeast; or mustard powder.
