This gluten-free green pesto's magic ingredient is petit pois peas! Which makes it rich, tasty and cheap to make. Once you have made this recipe you will never go back to buying it from the supermarket.
2 cupsPetit Pois
1 1/2 cupsBasil (add another half cup if you love basil)
1 tbspNutritional Yeast
1/2 cupOlive Oil
1 Large Lemon (Juice)
1 Garlic Clove
Salt & Pepper to taste
1Toast the cashews in a dry pan until golden brown. This is a simple technique you can do with all nuts and seeds to bring out their flavour.
2Add to a food processor with all the other ingredients and process until a bright green paste is formed.
3Spoon into a jar and refrigerate until ready to use.
4Serve with pasta, with potatoes or in a sandwich.
