If you were a fan of egg mayo sandwiches back when you ate egg, then this high protein sandwich will tick some boxes. It takes no time to make and with a couple of secret ingredients, such as black salt and white pasta, you will think you are eating an egg sandwich. If you didn't want it to be so eggy, and you just want a satisfying sandwich, then just replace the black salt with normal salt.
4 tbspVegan Mayonnaise
1/2 tbspMustard Powder
1 tbspApple Cider Vinegar
1/2 tspBlack Salt (Kala Namak)
1 Block of Firm Tofu (280g)
1 cupCooked White Pasta (30 pieces)
1Mix the mayonnaise, mustard powder, black salt and vinegar together in a bowl.
2With your fingers, crumble in the tofu. You are creating a cooked "yolk" consistency, so crumble the pieces quite small.
3For the "egg white" part, chop the white pasta (or blitz in a blender) into rough 1cm pieces. And stir them into the mixture.
4Serve with cress bewtween two thick slices of bread.
5Optional extras ingredients: half a teaspoon of paprika; a tablespoon of nutritional yeast; a teaspoon of garlic powder.
