3 Ingredient Stacked Pancakes with ‘This Isn’t Bacon’

Have you tried This Isn’t Bacon yet?

We believe this product is absolutely a game changer. It’s salty, chewy, smoky, sweet, all the things you want plant based bacon to be.

Rather than doing a standard bacon sandwich to show off these wonderful rashers, we thought it would sit nicely on top of a stack of pancakes with lashings of maple syrup – if the Americans can do it, then so can we!

Ingredients

  • One Banana
  • One and a half cups of Oats
  • One cup Vegan Milk
  • One packet of This Isn't Bacon
  • Maple Syrup for drizzling

Instructions

  1. In a processor, whizz up the oats to make an oat powder consistency.
  2. Add the banana and oat milk and blend to make the pancake batter.
  3. In a pan, pour some cooking oil and allow to heat slowly on medium heat.
  4. Pour three tablespoons worth of the batter into the pan using the back of your spoon to lightly shape it into a small circle shape.
  5. Fry for a couple of minutes and you should see some bubbles in the pancake.
  6. When ready, flip the pancake and cook the other side.
  7. Keep flipping until you achieve a nice golden colour on both sides.
  8. Cook the whole batch and stack on your serving plate.
  9. Fry the “This Isn’t Bacon” using the instructions on the packet. (The pancake recipe serves one person so double it to serve two, and obviously cook up the quantity of bacon as per your serving)
  10. Place the bacon on the pancakes and drizzle with maple syrup.
