Calling all hummus fans! Check out this simple recipe out for an alternative to the normal hummus dip.

Beetroot is the magic ingredient in this recipe. Not only does it turn the hummus into an incredibly vibrant colour, but it gives it a more earthy & sweet taste. By adding beetroot you are getting a good source of folic acid and fibre into your diet.

Ingredients

  • Beetroot (cooked) - x2
  • Chickpeas - (1 can) 400g
  • Juice of Large Lemon - 1
  • Tahini - 1 Tbsp
  • Garlic - 1 Clove
  • Water - 1 Tbsp
  • (Sunflower & Sesame Seeds for garnish)

Instructions

  1. Drain the juice from the tin of chickpeas and add them to the processor.
  2. Add all the other ingredients and process until smooth.
  3. Serve on toast with sliced avocados, black sesame seeds and sunflower seeds.
