Ingredients

  • Ripe Bananas - 4
  • Plain Flour - 1 ½ Cups
  • Baking Powder - 1 ½ Tsp
  • Bicarbonate of Soda - ½ Tsp
  • Brown Sugar - ⅓ Cup
  • Coconut Oil - ¼ Cup
  • Vanilla - 1 Tsp
  • Dark Chocolate broken into chunks - 100g

Instructions

  1. Preheat the oven to 177C Gas Mark 4
  2. Grease a 2lb loaf tin with oil and line with parchment paper
  3. Mash the bananas with the back of a fork. Add the vanilla and coconut oil and mix.
  4. In a separate bowl mix the rest of the ingredients. Add to the wet mix and combine thoroughly.
  5. Pour in tin and bake for 40 – 50 minutes or until the skewer comes out clean and free from cake batter.
  6. Enjoy as a snack or for breakfast with a cup of tea. Be prepared to eat it all up, this cake is simply too irresistible to eat just one slice.
