Ingredients

  • 2 Tbsp Oil (for frying)
  • 2 Onions (finely chopped)
  • 2 Tbsp Garlic Paste
  • 2 Tbsp Ginger Paste
  • 2 Tbsp Curry Powder
  • 2 Tbsp Mild Chilli Powder
  • 1 Tsp Salt
  • 1 Tsp Cracked Pepper
  • 1 Tsp Sugar
  • 2 Tbsp Tomato Paste
  • 1/3 Cup Apple Cider Vinegar
  • 3/4 Cup Water
  • 1 Tin of Jackfruit
  • 3 Cloves

Instructions

  1. Put the pan on a medium heat and pour the oil in.
  2. Add the chopped onions and fry until translucent.
  3. Add the garlic and ginger and fry for a couple of minutes longer.
  4. Add the curry powder, chilli powder, salt, pepper, tomato paste, apple cider vinegar and mix.
  5. Add the water, sugar, jackfruit and cloves and mix until combined and the jackfruit is coated in the curry mix.
  6. Turn the heat to low and place the lid on.
  7. Simmer for 15 minutes stirring occasionally to stop it from sticking to the bottom of the pan.
  8. After the 15 minutes, use two forks to shred the jackfruit to a stringy, meaty texture.
  9. Add another 1/4 cup of water if needed and mix.
  10. Simmer for another 15 minutes.
  11. Serve with rice and enjoy this delicious flavoursome curry. You won’t believe it doesn’t contain meat.
