Easy Cheezy Vegan Polenta Bake

One of our simplest yet most satisfying recipes, polenta is a wonderful ingredient

Polenta Bake is a bit like lasagna or a baked pasta dish. It can be had on it’s own with a nice side salad. A perfect meal if you are short on time.

Fact: Polenta is actually corn meal and can be found in different size grains which can effect the cooking time.

TIP: In this recipe we use the polenta found in Sainsburys with a three minute cooking time. This makes the bake even easier to make.

For this dish we used a ready made pasta sauce to pour on top, but you can always make your own. Just make sure it’s garlicy and rich.

We used a melty vegan cheese on this and it worked perfectly. If you struggle making yours melt then warm it into a small amount of plant milk first to encourage it to melt.

Is it gluten free? In short, yes it is. But you just have to make sure all ingredients are gluten free on the packet and not subject to cross contamination.

Ingredients

  • One cup of Polenta
  • Two tbsp Vegan Butter
  • Four Cups of Diluted Vegetable Stock
  • 200g Grated Vegan Cheese
  • One Jar of Vegan Pasta Sauce
  • Salt & Pepper to taste

Instructions

  1. Preheat Oven to Gas Mark 7
  2. Pour the stock in a saucepan and place on medium heat.
  3. When it starts to boil, turn the heat down to low and start adding the polenta. Make sure you whisk at the same time as pouring the polenta in to prevent lumps from forming.
  4. Continuously stir the polenta and you should start to see it thicken. When it reaches a ‘mashed potato consistency, take it off the heat and stir in the butter. 
  5. Add the mix to a dish (we used a 30cm dish) and smooth it to be the bottom layer. Be quick, it will start to set.
  6. Pour the jar of pasta sauce on and smooth out before sprinkling the cheese on top.
  7. Bake for 20 – 30 minutes.
  8. Serve with a fresh salad or vegetables.
