Here’s Pret’s Legendary Vegan Cookie Recipe

Pret have spent the last few days teasing the big reveal on their amazing Dark Chocolate Almond Butter Cookie recipe.

They posted it for all to see yesterday and our friend, Sophie Bullimore (@sophie.bullimore) took the recipe, and made a batch quick-style.

Here is the recipe with a couple of tweaks by Sophie. Be warned, these taste like the real thing:

Ingredients:
43g caster sugar
112g soft light brown sugar
40g flaked almonds, lightly crushed
112g dark choc pieces
205g flour
20g cocoa powder
1/2 tsp bicarb
65g coconut oil
72g almond butter
100g golden syrup
40g water
3/4 tsp salt

Method:
1. Add all the dry ingredients to a large baking bowl (including the dark chocolate and almond pieces) and give this a little stir.
2. In a separate bowl add the golden syrup, almond butter, coconut oil and water and mix until everything is incorporated.
3. Pour the syrup mix into the dry ingredient bowl and mix with a wooden spoon until well combined and a cookie dough batter has formed,
4. Using your hands, shape the dough into balls and pop on a lined baking tray. Place in the oven and bake for 12-15 minutes. Once baked, set aside to cool for around 10 minutes and Ta dah!
