Lemon Drizzly Day Cake

Minus the poppy seeds, you probably have all the ingredients for this recipe in your cupboard already, but the seeds definitely add some crunchy finesse to this beautiful dessert.

Ingredients

  • (Dry Ingredients)
  • 275g / 2 Cups Self Raising Flour
  • 200g / 1 Cup Sugar
  • 1 Tsp Baking Powder
  • 2 Tbsp Poppy Seeds
  • (Wet Ingredients)
  • 50ml / ¼ Cup Sunflower Oil
  • The juice of 1 Lemon plus its zest
  • 200ml Dairy Free Milk (I used Oat for this recipe)
  • (Drizzle Ingredients)
  • Icing Sugar - 4oz
  • Lemon Juice

Instructions

  1. Preheat oven 200C Gas 6
  2. Grease a 2lb loaf tin with oil and line with parchment paper
  3. Mix the dry ingredients together until fully combined.
  4. Mix the wet ingredients together including the rind.
  5. Make a hole in the dry mix and start adding and mixing the wet ingredients.
  6. Mix until fully combined then continue mixing for about 30 seconds after.
  7. Pour the mix into the tin and bake for 40 – 50 minutes or until your skewer comes out clean of cake batter. 
  8. Add the lemon juice to the icing sugar until you get the correct consistency to drizzle it on the cake.
  9. Grate some lemon zest on top to decorate.
  10. Serve with a cup of tea.
