An epic veganized version of the classic british dessert known as Treacle Sponge Pudding, or Steamed Treacle Pudding. Either way it's plant-based warm spongy, treacly and puddingy and basically awesome!
Add the flax and water together and place to the side.
Place the butter and sugar in a bowl and mix.
Add half of the flour and all of the baking powder and mix again.
Add the rest of the flour and mix. The ingredients will be quite hard to mix but don't worry we will loosen it up next.
Add the flax meal and vanilla and mix.
Now add the milk one small drop at a time mixing as you go.
Do not add all the milk in one go, just small drops and mixing until all the milk is in the bowl and a batter has been made.
Now grab your pudding moulds and pour in about 2 tablespoons of your syrup.
Spoon in the batter to fill three moulds.
Place some foil over the top and place in your slow cooker.
Pour some hot water into the slow cooker so it reaches up to about the half way high of the puddings.
Place the lid on top and set to high.
Leave to cook for 1 hour 30 minutes.
Once ready, take the foil off and flip upside down on a plate. It might be hot so be careful.
Enjoy with a drizzle of cream on top.
