Porkless Bites with Nasu Dengaku (Miso Grilled Aubergine)

Nasu Dengaku (Miso Grilled Aubergine) is a fantastic and simple side to go with Porkless Bites by Gardein.

So far as we know, Gardein are the only ones to have made a pork alternative such as this. So it seems only fair to create a delicious accompaniment to go with it.

This recipe calls for mirin, miso and apple cider vinegar, which can all be found at supermarkets for a low cost and are essential cupboard staples for Asian cooking.

Ingredients

  • One packet of Gardein Porkless Bites
  • Two Aubergines
  • Two Tbsp Miso Paste
  • One Tbsp Sugar
  • One and a half Tbsp Mirin
  • One and a half Tbsp Rice Wine Vinegar
  • Rice to serve
  • Chopped Chillis, Spring Onion & Seasame Seeds (for Garnish)

Instructions

  1. Preheat the oven to 200C (Gas Mark 6)
  2. Wash the aubergines and slice in half.
  3. Score the flesh of the aubergines in a diamond pattern about 3mm deep.
  4. Sprinkle with salt and place in the oven for around 30 to 35 minutes or until the flesh is soft.
  5. Meanwhile, in a bowl mix together the miso, sugar, mirin and apple cider vinegar.
  6. Brush it on the aubergines and place them back in the oven for five minutes.
  7. Now its time to cook the porkless bites. Cook as per instuctions on the packet.
  8. When ready, serve the porkless bites on a bed of rice.
  9. Sprinkle with seasame seeds, chopped spring onions and chopped chilli for a bit of spice.
