Ingredients
Bombay Spiced Chips, Curried Peas, Raita Tartare Sauce
Bhajis Battered Banana Blossom 1 tin marinated banana blossom 210ml indian pale ale
1/2 bunch coriander, roughly chopped 1tsp salt
1 medium onion, finely chopped 100ml passata
200g fresh green peas (or frozen) 1 teaspoon turmeric
1 tablespoon ground coriander 1/2 teaspoon Kashmiri chilli powder salt to taste
1 cup english cucumber, finely diced 1/4 cup fresh coriander, minced 1/4 cup fresh mint, minced
Directions
1For the Bhaji Battered Banana Blossoms: Mix all the ingredients together for the bhajis batter. drain the banana blossoms and toss in flour then dip in the batter until completely coated. Carefully lower into a deep fryer or pan of oil at 180ºC and cook for 6-8 minutes, turning half way through until golden browns and crisp all over. Once cooked remove from the oil and drain on a wire rack.
2For the Bombay Spiced Chips: Mix all the spices and salt together to make the Bombay Spice Salt. Cook the chips as per packet instructions and once cooked toss with the spice mix. Adjust the amount to suit your taste.
3For the Curried Peas: Heat the oil over a medium heat and add the onion and sweat for 5 minutes until soft and golden. Add the spices to the onion and continue to cook for another minute, then add the passata and bring to the boil. Finally add the peas and continue to cook until tender. Taste and adjust the seasoning.
