Directions
1for the salt & pepper tofu: tear 300g of the tofu into rough chunks, add them to a bowl with the cornflour, salt & pepper to taste then toss to coat evenly
2fry in a generous amount of oil over medium-high heat until golden then remove & set aside
3slice the peppers, finely chop half of the chilli, dice the onion, mince the garlic & fry them all over a high heat along with the five spice, sugar, pepper & a generous amount of salt- stirring continuously so nothing burns
4once the peppers & onion have begun to soften (only slightly, you want them to retain their texture) return the tofu chunks to the pan & toss to coat everything evenly
5for the fried rice: crumble 100g of the tofu into an oiled pan over a medium-high heat & fry for 2-3 minutes
6add the black salt & tamari along with the cooked rice & stir fry until everything is combined
7prepare your curry sauce according to packet instructions then serve poured over the salt & pepper tofu & fried rice
8garnish with sliced spring onion & chilli
