Kimchi Cheeze Toastie

Ingredients

4 slices of sourdough

Kimchi (as desired)

150g Applewood smoked vegan cheese, sliced/grated

3 tbsp vegan mayo

1 tbsp gpchujang

2 spring onions

Vegan butter/margarine

Directions

1Mix the vegan mayo with the gochujang to make your gochujang mayo then set aside for later

2Butter both sides of each slice of bread then top with a good layer of applewood vegan cheese

3Top with kimchi & spring onion then spread gochujang mayo on the top slice of bread & lay it on top of the toastie

4Carefully place in a frying pan & cook over a medium heat, flipping halfway, until both sides are golden & the cheese is melted (tip: cover with a lid to help the cheese melt)

5Cut open & enjoy!
