Miami Sausage Corn Dogs

Ingredients

6 Miami Sausages

100g cornmeal (fine)

100g plain flour + extra for sprinkling

2 tsp baking powder

2½ tbsp granulated white sugar

¼ tsp sea salt

¼ tsp pepper

175ml unsweetened soy milk

60ml aquafaba (chickpea liquid)

wooden skewers

organic frying oil of your choice

American mustard

ketchup

crispy onions

chives

Directions

1Cook the Miami Sausage in the oven as per packet instructions, remove it from the oven, and leave it until cool enough to handle.

2Into a bowl add the cornmeal, flour, baking powder, sugar, salt, pepper, soy milk, and aquafaba, and whisk everything together until it forms a thick batter. You can add a little more flour or cornmeal if the batter is too thin.

3Pour the batter into a tall narrow glass and put it to one side. Thread the sausages lengthways onto skewers and roll each one in a little flour. Then dip the sausages into the batter in the glass until completely coated.

4Deep fry the battered sausages at 180ºC for 3-4 minutes, carefully turning over during the cooking until golden brown and crisp. Remove from the hot oil and leave to drain.

5Finish the corn dogs with the ketchup mustard, onions, and chives, then serve immediately.
