1Place a pan over medium heat and add the olive oil. Once the oil is hot add the mushrooms and cook over the heat until they shrink and soften, then remove from the pan and put to one side.
2Add the remaining oil to the pan and cook the baby spinach until wilted. Once cooked drain the spinach and put it to one side.
3Spread the pesto over two slices of the bread and read the tomato paste over the remaining slices. Then top the tomato spread slices with the mushrooms and spinach. Finally, sprinkle over the Applewood cheese and top with the pesto-covered bread.
4Heat a large spoonful of the vegan spread in a hot pan and once it’s foaming, add the sandwich to the pan and cook for 2-3 minutes on both sides until golden brown.
5Remove the sandwich from the pan and add the remaining grated Applewood to the pan and place the sandwich back over the top. Continue to cook until the grated Applewood is crisp and golden brown.
6Remove the cheese toastie from the pan and serve.
