Vegan Caponata Pasta is made with beautiful rigatoni and had a wonderful balance of sweet & sour flavours This dish is the ultimate comfort food and is ready no time at all Here is a short video on how we made it

Ingredients

1 Large Onion, chopped

1 Tbsp Minced Garlic

200g Chargrilled Peppers, chopped

100g Red Aubergine (we bought ours from Tesco), chopped

1/4 Cup Black Olives, chopped

1 Tbsp Capers

1 Tbsp Balsamic Vinegar

1 Tin of chopped Tomatoes

350g Rigatoni Pasta

A handful of roughly chopped Basil

Vegan Parmesan

Directions

1Start by placing your pasta in a pan and cook as per the instructions on the packet.

2In a pan, add the chopped onions and allow to sautee for a few minutes until translucent.

3Add the garlic and cook for a further minute.

4Now add the peppers, aubergine, olives, capers, balsamic, tinned tomatoes, and mix.

5Allow to simmer and reduce the liquid slightly before adding your cooked pasta.

6Gently coat the pasta in the sauce.

7Sprinkle the chopped basil leaves and vegan parmesan on top and serve.
