Studland Beef Goulash

This Vegan "Beef" Goulash is such a fantastic one-pot meal to make. It's simple and fairly quick to make.

Goulash originates from Hungary and is traditionally made with beef.

This recipe has an American twist and uses macaroni pasta and vegan cheese to add some sustenance and sourness to the finished dish.

The end result of this marvellous meal is almost like a rich Italian pasta dish, with savoury beef flavours coming through.

We call it a 'Studland' Goulash as it's the name of the place where we first cooked it in our campervan.

 

Ingredients

1 Tbsp Finely Chopped Garlic

250g of Vegan Mince Beef

One Onion

One Green Pepper

5 Tbsp Tomato Puree

2 Tins Chopped Tomatoes

2 Tbsps Driex Mixed Italian Herbs

450g Dried Macaroni

750ml Vegan Beef Stock

3 Tsps Vegan Worcester sauce

Handful Vegan Grated Cheese

2-3 Tbsps of Vegan Sour Cream

Handful Chopped Parsley

Salt n pepper

Directions

1Heat oil in a large deep pan and fry onions and green pepper until soft

2Add the mince to the same pan and fry until it is browned off

3Now add the garlic to the pan and fry for a further 45 seconds

4Add all the other ingredients to the pan, excluding the cheese, parsley, sour cream and parsley.

5Bring it all to the boil and then reduce the heat and simmer for 15-20 mins.

6Top up with more stock if necessary

7When the sauce has thickened and the macaroni is cooked, take it off the heat.

8Sprinkled over the vegan grated cheese and gently fold it through the Goulash.

9Serve with a few dollops of vegan sour cream and a sprinkling of fresh parsley
