1Add the tuna to a bowl along with the red onion, peppers, parsley, vegan mayo & lemon juice, season to taste then give it a good mix
2Butter both sides of each slice of bread then top one slice with the tuna mix, some vegan cheese & the remaining slice of bread
3Carefully transfer to a dry frying pan & cook over a medium heat, flipping halfway, until both sides are golden & the cheese has melted (tip: cover with a lid to help the cheese melt)
