Tempeh Vegan Bacon Bits

You can’t have enough vegan bacon recipes, you really can’t!

Tempeh is becoming mainstream since Sainsbury’s, and probably more to follow, are now selling it. It’s one of the healthiest vegan foods and it’s high in protein.

If you don’t know what it is, it’s fermented soy. Not like tofu at all, but with more of a meaty consistency once cooked. It has been used in Asia for centuries.

This Bacon Bits recipe is great to sprinkle on salads or loaded potato skins.

Ingredients

  • 198g (1 Block) Tempeh
  • 1/4 Cup Soy
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Smoked Paprika
  • 1 Tbsp Liquid Smoke
  • 1 Tsp Onion Powder

Instructions

  1. Chop the tempeh into small pieces and add to a bowl.
  2. Add the rest of the ingredients and mix so all the tempeh is coated.
  3. Cover and place in the fridge to marinate for at least three hours. If you have the time, leave overnight and you will see that the tempeh has soaked all the marinade up.
  4. When ready, preheat the oven to 190C (Gas Mark 5) and line your baking tray with parchment paper.
  5. Place the tempeh on the tray and spread it out so that most of the tempeh bits are not touching one another.
  6. Place in the oven for half an hour turning over halfway through.
  7. Serve sprinkled ontop of loaded jacket potatoes, pasta, pizza etc.
