Tzatziki (or tat-zeeky if you are from the UK) is a beautifully light dip or dressing that goes well with Greek food, Middle Eastern food, falafel and of course with our famous vegan Halloumi Fries.
This is a really simple four ingredient recipe that tastes just amazing.
- Soy Yogurt - 1/2 Tub (250g)
- Cucumber - 1/2
- Minced Garlic - 1/2 Tsp
- Chopped Mint Leaves - 1 Tsp
- (Salt & Pepper to taste)
Slice the cucumber in half lengthways and scoop out the seeds with a spoon.
Discard the seeds, its the cucumber flesh we are after.
Grate the cucumber into a sieve and use the back of a spoon to drain as much water as possible (sometimes squeezing the cucumber with your hand expells a little more of the water).
Put the cucumber in a bowl and add the yoghurt, garlic, mint and salt & pepper.
Mix well and place in the refrigerator to allow the flavours to infuse.
