Vegan Broccoli, Leek & Lemon Linguine

Leek and Lemon Linguine is another super easy, but super delicious pasta dish.

We add steamed broccoli to this beautiful recipe as it goes so well with the lemon and leeks.

Pasta recipes need not be complicated and this recipe is just that…dead simple.

Ingredients

  • INGREDIENTS
  • Linguine (Cooked)
  • Two Leeks (sliced into disk shapes)
  • One Tsp Minced Garlic
  • One Cup Broccoli (steamed)
  • Half Cup Parsley
  • Half Cup Vegan Parmesan
  • Juice of One Lemon
  • Two Tbsp Oil
  • Salt & Pepper

Instructions

  1. Follow your cooking instructions on the linguine pasta packet and place to the side until ready to use.
  2. Add the oil to a pan and put on medium heat.
  3. Add the leeks and lightly saute until soft.
  4. Add the minced garlic and broccoli and mix.
  5. Add the cooked pasta and fold the vegetables through.
  6. Squeeze over the juice of the lemon.
  7. Add the parsley, salt & pepper and parmesan & mix.
  8. Serve & enjoy.
