Alex’s famous Chilli

This show stopping Chilli will impress everyone around the dinner table! Ingredients like dark chocolate and lemon juice give this Chilli a unique taste that is second to none!

Ingredients

1 red onion, chopped

1 red pepper, chopped

3 cloves garlic, minced

2 tins chopped tomatoes

200ml water

2 tbsp tomato puree

½ tsp veggie stock powder or 1-2 veggie stock cubes

1 tsp Smoked paprika

½ tsp Cayenne

¾ tsp Cumin

1 tsp Turmeric

3 bay leaves

Juice of ½ lemon

Dark chocolate (over 80%), to taste

100g vegan mince

1 tin kidney beans, rinsed

Salt and Pepper to taste

Directions

1In a large pot, fry the onion and red pepper. Once both have softened, add your garlic

2Add all ingredients besides the chocolate, vegan mince, and kidney beans

3Start by adding one eighth of a bar of dark chocolate and let the flavours develop for a few minutes before tasting it. You don’t want to add too much in the beginning but just enough to give the chilli a depth of flavour without making it taste like chocolate*

4Add Salt and Pepper to taste

5A key step here is to let the chilli base develop its flavour and then give it a taste. It’s important to wait around 5-10 minutes after adding the seasonings and chocolate to give them time to get to know each other. Adjust and add any extra of the above seasonings here to adjust to your taste if needed

6Add the vegan mince and cook for around 30 minutes. Stir occasionally and let the chilli thicken up

7Once the chilli has thickened up, add the kidney beans, and cook for another 10 minutes

8Serve with rice, avocado and fresh coriander

*You can always add more chocolate, but you can’t take it back out so be mindful when you add it. How much you’ll need also depends on the quality and percentage of the chocolate itself.
