Crispy Tofu in Spicy Peanut Sauce

A simple Tofu Satay Recipe
With this recipe you can either oven-bake the tofu or shallow fry it, depending on what you fancy - we give instructions for both.

Directions
1TO OVEN BAKE THE TOFU
2Place a baking sheet in the oven. Preheat oven to 200°C
3Cut the tofu into 2 cm cubes. Combine cornstarch, garlic powder and paprika in a shallow dish. Gently dredge tofu in cornstarch mixture, gently shaking off excess.
4Remove the baking sheet from the oven. Add oil to pan; carefully tilt pan to coat evenly with oil. Add tofu to pan toss to coat with the oil and bake at 200°C for 15 minutes. tossing from time to time until crisp.
5TO FRY THE TOFU
6Combine the Cornflour, Paprika and Garlic Powder to a bowl and coat tofu until all 2cm cubes are evenly covered, shaking off any excess powder.
7Then shallow fry on a medium heat with two tablespoons of oil until all cubes are golden.
8Place the cooked tofu on Kitchen paper to one side whilst you make the satay sauce.
9SATAY SAUCE
10Place a saucepan over a medium heat. Add the oil followed b the shallot, chilli, garlic and ginger. Sauté for 2-3 minutes until the shallots are softened and the oil begins to take on the red colour of the chilli.
11Add in the peanut butter and stir, breaking it down. It should start to melt. Now add the dark soy sauce, coconut cream and water into the saucepan and stir for 3-4 minutes, until the peanut butter has been incorporated into he satay sauce.
12Simmer the mixture on a low heat for around 1-2 minutes, then turn off the heat and add the lime juice. Add the crispy tofu to the satay sauce and stir everything together.
13Serve the satay tofu with fried rice or glass noodles.
